  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 3 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
  2. In a bowl, whisk together eggs, sugars, oil, and vanilla until smooth.
  3. Fold in grated carrots.
  4. In another bowl, mix flour with spices, salt, baking powder, and baking soda.
  5. Gradually combine dry ingredients with wet ingredients until just mixed; fold in walnuts if desired.
  6. Pour batter into the prepared pan and bake for 30–35 minutes or until a toothpick comes out clean.
  7. Allow to cool completely before preparing the frosting by beating cream cheese and butter until fluffy; gradually add powdered sugar.
