Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
- In a bowl, whisk together eggs, sugars, oil, and vanilla until smooth.
- Fold in grated carrots.
- In another bowl, mix flour with spices, salt, baking powder, and baking soda.
- Gradually combine dry ingredients with wet ingredients until just mixed; fold in walnuts if desired.
- Pour batter into the prepared pan and bake for 30–35 minutes or until a toothpick comes out clean.
- Allow to cool completely before preparing the frosting by beating cream cheese and butter until fluffy; gradually add powdered sugar.
