  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest of 1 lime
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. In a mixing bowl, combine mayonnaise, sour cream, lime juice and zest, dill, Dijon mustard, garlic, and salt. Mix well to form the dressing.
  2. Bring a large pot of water to boil. Add shrimp and cook for 2 to 3 minutes until pink. Prepare an ice water bath.
  3. Transfer cooked shrimp to the ice bath for about 3 minutes, then chop into bite-sized pieces.
  4. In the mixing bowl, add chopped shrimp, diced cucumber, and sliced green onions to the dressing. Stir gently until well combined.
