Ingredients
- 1 cup quinoa
- 2 cups water
- 1/2 cup grated carrots
- 1/2 cup chopped spinach
- 1/2 cup chopped onion
- 1/4 cup breadcrumbs
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water. In a pot, combine quinoa and water; bring to a boil, then reduce heat and simmer for about 15 minutes until water is absorbed. Fluff with a fork.
- While the quinoa cooks, grate the carrots and chop the spinach and onion. Combine in a mixing bowl.
- Add cooled quinoa to the vegetable mixture along with breadcrumbs, garlic, cumin, salt, and pepper; mix well.
- Form small patties (about 1/4 cup each) and place on a parchment-lined baking sheet.
- Preheat the oven to 400°F (200°C). Bake patties for 20-30 minutes until golden brown, flipping halfway through.
