Ingredients
- 600 g potatoes (peeled and grated)
- 80 g mozzarella cheese (grated)
- 2 large eggs
- 150 g baby spinach
- 200 g champignon mushrooms (sliced)
- 120 g mozzarella fior di latte (torn into pieces)
- 30 g Parmesan cheese (grated)
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 4 tablespoons olive oil
Instructions
- Preheat your oven to 200°C (400°F). In a mixing bowl, combine grated potatoes with salt, pepper, oregano, olive oil, and half of the mozzarella cheese. Mix well.
- Press the potato mixture into a baking dish to form an even crust and bake for about 25 minutes until golden brown.
- While the crust bakes, heat olive oil in a frying pan over medium heat. Sauté garlic and green onion until fragrant, then add mushrooms and spinach. Season with salt, pepper, and oregano until tender.
- Remove the baked crust from the oven and layer the sautéed vegetables on top. Sprinkle with remaining mozzarella cheese and torn mozzarella fior di latte, followed by grated Parmesan.
- Return the pie to the oven for another 30 minutes until bubbly and golden on top.
