  • 2 lbs baby potatoes
  • 6 slices bacon
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and halve the baby potatoes.
  3. Chop bacon into small pieces.
  4. In a mixing bowl, combine halved potatoes, olive oil, garlic powder, smoked paprika, salt, and pepper; toss to coat evenly.
  5. Spread the coated potatoes on the baking sheet in a single layer; scatter chopped bacon on top.
  6. Roast for 30-35 minutes, flipping halfway through until golden brown.
  7. Drizzle honey over the potatoes during the last 5 minutes of roasting; return to oven until caramelized.
