- 3 cups packed baby spinach
- Sea salt and black pepper, to taste
- 2 tablespoons lemon juice

- Heat olive oil in a large skillet over medium-high heat. Add shallots and sauté until translucent (3-5 minutes).
- Stir in minced garlic and cook for an additional 30 seconds.
- Add butter beans, vegetable stock, and miso paste. Stir well and let simmer for about 10 minutes.
- Mix in the cream (or coconut cream) and simmer for another 5 minutes.
- Fold in baby spinach along with salt and pepper until wilted. Finish with lemon juice.
