  • 2 shallots, thinly sliced
  • 2 cloves garlic, minced
  • 2 cans butter beans, drained and rinsed
  • 1 1/2 cups vegetable stock
  • 1 tablespoon white miso paste
  • 1/2 cup whole cream or coconut cream
  • 3 cups packed baby spinach
  • Sea salt and black pepper, to taste
  • 2 tablespoons lemon juice

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add shallots and sauté until translucent (3-5 minutes).
  2. Stir in minced garlic and cook for an additional 30 seconds.
  3. Add butter beans, vegetable stock, and miso paste. Stir well and let simmer for about 10 minutes.
  4. Mix in the cream (or coconut cream) and simmer for another 5 minutes.
  5. Fold in baby spinach along with salt and pepper until wilted. Finish with lemon juice.
  6. Serve warm, optionally garnished with fresh herbs.
