  • 4 slices turkey bacon (or chicken ham)
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, diced
  • 4 cups seafood stock (or chicken broth)
  • 1 cup heavy cream (or half-and-half)
  • Fresh herbs for garnish

Instructions

  1. In a large pot over medium heat, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté the diced onion and celery in the bacon drippings until softened. Add minced garlic and cook until fragrant.
  3. Stir in diced potatoes and seafood stock; bring to a boil then reduce heat to simmer for about 15 minutes or until potatoes are tender.
  4. Add lobster meat and scallops to the pot along with heavy cream. Toss in bay leaves and simmer gently for another 10 minutes.
