  • 1 tsp Old Bay seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp cayenne pepper (optional)
  • 2 tbsp all-purpose flour
  • 2 cups seafood or chicken broth
  • 1 ½ cups heavy cream
  • 1 tbsp Worcestershire sauce
  • 1 tbsp lemon juice
  • 1 tsp fresh thyme (or ½ tsp dried)

Instructions

  1. In a large pot, melt butter over medium heat. Sauté onion, celery, and garlic for 3–4 minutes until soft.
  2. Stir in tomato paste, Old Bay seasoning, salt, black pepper, and cayenne; cook for an additional 1–2 minutes.
  3. Sprinkle in flour while stirring continuously to form a roux; cook for 1 minute.
  4. Gradually add broth while stirring; simmer for about 10 minutes until slightly thickened.
  5. Reduce heat and stir in heavy cream, Worcestershire sauce, lemon juice, and thyme; simmer gently for another 5 minutes.
  6. Fold in lump crab meat carefully to prevent breaking; heat through for another 2–3 minutes.
  7. Taste and adjust seasoning before serving hot with crusty bread.
