  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach leaves
  • 1/2 cup dried cranberries
  • 4 ounces Brie cheese, sliced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully cut pockets into each chicken breast and season inside and out with salt, pepper, garlic powder, onion powder, and thyme.
  3. Sauté spinach in olive oil until wilted; mix with cranberries in a bowl.
  4. Stuff each chicken breast with the spinach mixture and top with Brie slices.
  5. Secure pockets with toothpicks.
  6. Sear stuffed chicken in an oven-safe skillet until golden brown on both sides.
  7. Add chicken broth to the skillet; transfer to preheated oven and bake for 20-25 minutes until cooked through.
