  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced)
  • 4 cups chicken broth
  • 1 cup shredded carrots
  • 4 cups coleslaw mix
  • 2 tablespoons soy sauce (or tamari)
  • 1 tablespoon rice vinegar
  • 1 teaspoon ground black pepper
  • Optional: red pepper flakes, green onions, sesame seeds

Instructions

  1. In a large pot or Dutch oven, heat sesame oil over medium heat and cook the ground pork until browned, about 5–7 minutes.
  2. Add chopped onion, garlic, and ginger; sauté for another 2–3 minutes until translucent.
  3. Stir in chicken broth, carrots, coleslaw mix, soy sauce, rice vinegar, black pepper, and optional red pepper flakes.
  4. Bring to a boil; then reduce heat and simmer for about 10 minutes until vegetables are tender.
  5. Serve warm in bowls and garnish with green onions and sesame seeds.
