  • 2 tablespoons Olive Oil
  • 1 large Onion
  • 3 cloves Garlic
  • 1 teaspoon Turmeric
  • 6 cups Vegetable Broth
  • 1 cup Lentils
  • 1 can Chickpeas
  • 1 cup Navy Beans
  • 1 cup Kidney Beans
  • 8 ounces Persian Noodles/Linguine
  • 2 cups Spinach
  • 1 cup Cilantro
  • 1 cup Parsley
  • 1 cup Dill
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Sour Cream/Yogurt
  • 1 cup Fried Onions

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent.
  2. Add minced garlic and turmeric; cook until fragrant.
  3. Pour in vegetable broth; add lentils, chickpeas, navy beans, and kidney beans. Bring to a boil.
  4. Reduce heat to low; cover partially and simmer for 30 minutes until lentils are tender.
  5. Stir in Persian noodles and fresh spinach; cook an additional 5 minutes until noodles are al dente.
  6. Season with salt and pepper; top with freshly chopped herbs before serving.
