Ingredients
- 2 tablespoons Olive Oil
- 1 large Onion
- 3 cloves Garlic
- 1 teaspoon Turmeric
- 6 cups Vegetable Broth
- 1 cup Lentils
- 1 can Chickpeas
- 1 cup Navy Beans
- 1 cup Kidney Beans
- 8 ounces Persian Noodles/Linguine
- 2 cups Spinach
- 1 cup Cilantro
- 1 cup Parsley
- 1 cup Dill
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 cup Sour Cream/Yogurt
- 1 cup Fried Onions
Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent.
- Add minced garlic and turmeric; cook until fragrant.
- Pour in vegetable broth; add lentils, chickpeas, navy beans, and kidney beans. Bring to a boil.
- Reduce heat to low; cover partially and simmer for 30 minutes until lentils are tender.
- Stir in Persian noodles and fresh spinach; cook an additional 5 minutes until noodles are al dente.
- Season with salt and pepper; top with freshly chopped herbs before serving.
