  • 2 large egg whites

  • Pinch salt
  • Pinch cream of tartar
  • 5 ounces fresh or thawed frozen raspberries (for sauce)

Instructions

  1. Preheat oven to 375°F (190°C). Grease two ramekins with 1 tablespoon of butter and dust with cocoa powder.
  2. Melt chocolate and remaining butter over simmering water, stirring until smooth; remove from heat and stir in vanilla.
  3. In a separate bowl, whisk egg yolks and sugar until pale; mix in the chocolate mixture.
  4. In another bowl, beat egg whites with salt and cream of tartar until stiff peaks form.
  5. Gently fold whipped egg whites into the chocolate mixture until fully incorporated.
  6. Pour into ramekins and bake for about 20 minutes, until puffed but still soft in the center.
  7. For raspberry sauce, blend raspberries with sugar until smooth; strain if desired.
  8. Dust soufflés with powdered sugar, drizzle with raspberry sauce, and serve immediately.
