- 4 bone-in chicken thighs (about 2 pounds)
- 1/4 cup honey
- 2 tablespoons chipotle chili powder
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 pounds russet potatoes (peeled and cut into chunks)
- 1 cup milk
- 4 ounces smoked gouda cheese (shredded)
- 4 tablespoons unsalted butter

Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Add chicken thighs and marinate for at least 15 minutes.
- Boil peeled and chopped potatoes in salted water until fork-tender (15-20 minutes). Drain.
- Mash the drained potatoes with milk, butter, smoked gouda, salt, and pepper until smooth.
- Place marinated chicken thighs skin-side up in a baking dish. Bake for 25-30 minutes until crispy and internal temperature reaches 165°F (75°C).
- Serve chicken with gouda mashed potatoes drizzled with pan juices.
