  • 4 bone-in chicken thighs (about 2 pounds)
  • 1/4 cup honey
  • 2 tablespoons chipotle chili powder
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 pounds russet potatoes (peeled and cut into chunks)
  • 1 cup milk
  • 4 ounces smoked gouda cheese (shredded)
  • 4 tablespoons unsalted butter
  • to taste salt and pepper (for seasoning mashed potatoes)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Add chicken thighs and marinate for at least 15 minutes.
  3. Boil peeled and chopped potatoes in salted water until fork-tender (15-20 minutes). Drain.
  4. Mash the drained potatoes with milk, butter, smoked gouda, salt, and pepper until smooth.
  5. Place marinated chicken thighs skin-side up in a baking dish. Bake for 25-30 minutes until crispy and internal temperature reaches 165°F (75°C).
  6. Serve chicken with gouda mashed potatoes drizzled with pan juices.
