  • 2 cups cooked chicken breast, chopped
  • 4 cups fresh spinach
  • 2 cups sliced mushrooms
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch casserole dish.
  2. In a skillet over medium heat, sauté onions and mushrooms in olive oil until soft (5-7 minutes). Add garlic and cook for another minute. Stir in spinach until wilted; season with salt, pepper, and Italian seasoning.
  3. Spread cooked chicken in the bottom of the casserole dish. Top with sautéed vegetables.
  4. Pour heavy cream over the mixture and sprinkle with mozzarella and parmesan cheese.
  5. Bake uncovered for 20-25 minutes until the cheese is melted and golden brown.
