- 1/2 pound boneless skinless chicken meat
- 2 teaspoons soy sauce
- 1 tablespoon sake (or water)
- 1 ½ tablespoons soy sauce (for teriyaki sauce)
- Nori sheets (for wrapping)
- 1/2 teaspoon salt
- 2 tablespoons furikake (optional)
- 1/4 teaspoon baking soda
- 1 teaspoon cornstarch
- 1 tablespoon mirin
- 1 tablespoon brown sugar (firmly packed)
- 1 tablespoon oil
- 1 tablespoon minced garlic
Instructions
- Cook sushi rice and mix with salt and furikake.
- Marinate chopped chicken with soy sauce, sake, baking soda, and cornstarch for 30 minutes.
- Cook marinated chicken in oil until done; add garlic and teriyaki sauce ingredients to thicken.
- Shape rice into triangles with a filling of teriyaki chicken in the center.
- Wrap each onigiri with nori before serving.
