Description

Chicken Onigiri is a delicious and easy-to-make Japanese snack that combines tender teriyaki chicken with seasoned sushi rice, all wrapped in a flavorful sheet of nori. Perfect for any occasion, these customizable rice balls can be enjoyed as a quick snack, a delightful appetizer, or even as part of a bento box.


Ingredients

  • 4 cups cooked sushi rice
  • 1/2 pound boneless skinless chicken meat
  • 2 teaspoons soy sauce
  • 1 tablespoon sake (or water)
  • 1 ½ tablespoons soy sauce (for teriyaki sauce)
  • Nori sheets (for wrapping)
  • 1/2 teaspoon salt
  • 2 tablespoons furikake (optional)
  • 1/4 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1 tablespoon mirin
  • 1 tablespoon brown sugar (firmly packed)
  • 1 tablespoon oil
  • 1 tablespoon minced garlic

Instructions

  1. Cook sushi rice and mix with salt and furikake.
  2. Marinate chopped chicken with soy sauce, sake, baking soda, and cornstarch for 30 minutes.
  3. Cook marinated chicken in oil until done; add garlic and teriyaki sauce ingredients to thicken.
  4. Shape rice into triangles with a filling of teriyaki chicken in the center.
  5. Wrap each onigiri with nori before serving.
