  • 2 chicken breasts, diced
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 150g Boursin Garlic & Fine Herbs cheese
  • 1/2 cup milk or cream
  • 225g pasta (penne, fettuccine, etc.)
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Cook pasta according to package instructions. Reserve 1/2 cup of pasta water; drain and set aside.
  2. In a skillet over medium heat, heat olive oil. Add diced chicken, season with salt and pepper, and cook until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, sauté garlic and shallot until fragrant (about 2 minutes).
  4. Lower the heat and add Boursin cheese and milk or cream; stir until melted into a smooth sauce.
  5. Return chicken to the skillet; mix well to combine.
  6. Add cooked pasta to the skillet; toss to coat in sauce, adding reserved pasta water as needed for consistency.
  7. Serve warm, garnished with fresh herbs and Parmesan if desired.
