- 2 chicken breasts, diced
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 shallot, finely chopped
- 150g Boursin Garlic & Fine Herbs cheese
- 1/2 cup milk or cream
- 225g pasta (penne, fettuccine, etc.)
- Salt and pepper to taste
- Fresh parsley or basil for garnish (optional)
Instructions
- Cook pasta according to package instructions. Reserve 1/2 cup of pasta water; drain and set aside.
- In a skillet over medium heat, heat olive oil. Add diced chicken, season with salt and pepper, and cook until golden brown and cooked through. Remove chicken from skillet and set aside.
- In the same skillet, sauté garlic and shallot until fragrant (about 2 minutes).
- Lower the heat and add Boursin cheese and milk or cream; stir until melted into a smooth sauce.
- Return chicken to the skillet; mix well to combine.
- Add cooked pasta to the skillet; toss to coat in sauce, adding reserved pasta water as needed for consistency.
- Serve warm, garnished with fresh herbs and Parmesan if desired.
