  • 1½ cups cold unsalted butter (cubed)
  • 6 to 7 cups sliced apples (peeled and cored)
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 cups powdered sugar (for glaze)
  • 1 teaspoon salt
  • ½ cup ice water
  • 1 tablespoon lemon juice
  • ¼ cup brown sugar
  • 2 tablespoons cornstarch
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk
  • 2 tablespoons melted butter

Instructions

  1. In a large bowl, whisk together flour, sugar, and salt. Cut in cold butter using a pastry cutter until crumbly.
  2. In a separate bowl, mix eggs, ice water, and lemon juice. Combine with the flour mixture until dough forms. Divide and chill for 30 minutes.
  3. Toss sliced apples with sugars, cornstarch, cinnamon, nutmeg, salt, lemon juice, and vanilla. Preheat oven to 375°F.
  4. Roll out the larger dough piece into a pan-sized sheet and fill with the apple mixture. Cover with the second rolled-out dough piece and cut vents.
  5. Bake for 45-50 minutes until golden brown. Cool completely before glazing.
