  • 1/2 cup (113 grams) unsalted butter, at room temperature
  • 4 ounces cream cheese, at room temperature
  • 1 cup (200 grams) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate melting wafers, optional

Instructions

  1. Drain and chop maraschino cherries; set aside to dry.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. In a stand mixer, cream butter and cream cheese until fluffy. Add sugar and mix until pale. Incorporate egg, vanilla extract, almond extract, and reserved cherry juice.
  4. Gradually mix in dry ingredients until just combined; fold in chopped cherries. Chill dough for at least one hour.
  5. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  6. Scoop cookie dough onto the baking sheet and bake for about 10 minutes until edges are golden. Cool on wire racks.
