  • 12 medium-large cremini mushrooms
  • 1 tablespoon unsalted butter
  • 2 cloves garlic
  • 2.5 cups fresh baby spinach
  • 4 oz cream cheese
  • 1/4 cup grated parmesan cheese
  • Seasonings: dried basil, salt, black pepper, crushed red pepper flakes
  • Topping: panko breadcrumbs (optional), additional parmesan cheese

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. Clean mushrooms and remove stems; set aside caps on the baking sheet.
  3. Sauté minced mushroom stems and garlic in melted butter for 2-3 minutes. Add spinach until wilted.
