  • 18 TBSP Unsalted butter (1 cup plus 2 tbsp)
  • 2 2/3 cups All-purpose flour
  • 1 TBSP Cornstarch
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 2 tsp Ground cinnamon
  • 1 tsp Ground ginger
  • 1/4 tsp Ground nutmeg
  • 1/2 tsp Cardamon
  • 1/4 tsp Ground cloves
  • 1 1/2 cups White granulated sugar
  • 2 Large eggs (room temperature)
  • 1 tsp Pure vanilla extract
  • 1/2 cup White granulated sugar for chai sugar
  • 1 tsp Ground cinnamon for chai sugar
  • 1/2 tsp Ground ginger for chai sugar
  • 1/4 tsp Ground nutmeg for chai sugar
  • 1/4 tsp Cardamon for chai sugar
  • 1/4 tsp Ground cloves for chai sugar

Instructions

  1. Melt unsalted butter in a pan; cook until amber in color. Cool for 40 minutes.
  2. Sift together flour, cornstarch, baking soda, salt, and spices in a bowl.
  3. In a large bowl, whisk cooled brown butter with sugar, eggs, and vanilla until combined.
  4. Gradually mix dry ingredients into wet ingredients using a rubber spatula until just combined.
  5. Chill dough for 10 minutes while preheating the oven to 350°F (175°C).
  6. Roll dough into balls; coat each ball in the chai sugar mixture.
  7. Place on parchment-lined baking sheets; bake for 13-15 minutes until edges are golden.
  8. Cool slightly before rolling in chai sugar again.
