- 18 TBSP Unsalted butter (1 cup plus 2 tbsp)
- 2 2/3 cups All-purpose flour
- 1 TBSP Cornstarch
- 1 tsp Baking soda
- 1 tsp Salt
- 2 tsp Ground cinnamon
- 1 tsp Ground ginger
- 1/4 tsp Ground nutmeg
- 1/2 tsp Cardamon
- 1/4 tsp Ground cloves
- 1 1/2 cups White granulated sugar
- 2 Large eggs (room temperature)
- 1 tsp Pure vanilla extract
- 1/2 cup White granulated sugar for chai sugar
- 1 tsp Ground cinnamon for chai sugar
- 1/2 tsp Ground ginger for chai sugar
- 1/4 tsp Ground nutmeg for chai sugar
- 1/4 tsp Cardamon for chai sugar
- 1/4 tsp Ground cloves for chai sugar
Instructions
- Melt unsalted butter in a pan; cook until amber in color. Cool for 40 minutes.
- Sift together flour, cornstarch, baking soda, salt, and spices in a bowl.
- In a large bowl, whisk cooled brown butter with sugar, eggs, and vanilla until combined.
- Gradually mix dry ingredients into wet ingredients using a rubber spatula until just combined.
- Chill dough for 10 minutes while preheating the oven to 350°F (175°C).
- Roll dough into balls; coat each ball in the chai sugar mixture.
- Place on parchment-lined baking sheets; bake for 13-15 minutes until edges are golden.
- Cool slightly before rolling in chai sugar again.
