- Fry until golden brown (2–3 minutes) and drain on paper towels.
- Mix ricotta, powdered sugar, vanilla, and cinnamon in a bowl until smooth; fold in chocolate chips if desired.
- Once shells are cool, fill with ricotta mixture using a piping bag.
- Dust with powdered sugar before serving.
