Ingredients
- 250g Digestive Biscuits or Graham Crackers
- 115g Butter
- 500ml Heavy Whipping Cream
- 250g Cream Cheese
- 60g Powdered Sugar
- 1–2 tsp Peppermint Essence
- 5 Candy Canes (crushed)
Instructions
- Prepare the crust by crushing biscuits and mixing them with melted butter. Press into a lined springform pan and chill.
- For the filling, whip heavy cream until soft peaks form. Mix room temperature cream cheese with powdered sugar until fluffy, then fold in whipped cream, peppermint essence, and crushed candy canes.
- Pour filling over chilled crust and smooth out. Refrigerate for at least 4-6 hours or overnight until set.
