Ingredients
- 10 eggs
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon hot sauce
- 2 teaspoons smoked paprika

- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon granulated sugar (optional)
- 20 medium shrimp (peeled and deveined)
- 2 tablespoons olive oil
- 1 jalapeño (thinly sliced)
- 2 tablespoons chopped fresh chives
- Lemon wedges (for serving)
Instructions
- Hard boil the eggs by placing them in a saucepan covered with water. Bring to a boil, then remove from heat and let stand for 12 minutes. Cool under cold water.
- Peel the eggs and halve them lengthwise. Remove yolks and mash with mayonnaise, mustard, hot sauce, and spices until smooth.
- Season shrimp with remaining spices and sauté in olive oil until slightly blackened.
- Fill egg whites with the yolk mixture using a piping bag or spoon. Top each with a shrimp slice and garnish with jalapeño and chives.
