  • 6 boneless center cut pork chops
  • 1 1/2 cups buttermilk
  • 2 cups Panko crumbs
  • 1/3 cup all-purpose flour
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 3 tablespoons olive oil
  • 2/3 cup chicken broth
  • 2 tablespoons freshly grated Parmesan cheese

Instructions

  1. Marinate pork chops in buttermilk for at least 2 hours (up to 24 hours).
  2. Preheat oven to 325°F.
  3. In a bowl, mix Panko crumbs, flour, Parmesan, garlic powder, salt, pepper, and paprika.
  4. Remove chops from buttermilk; season lightly with salt and pepper.
  5. Coat each chop in the crumb mixture.
  6. Sear in olive oil over medium-high heat until golden brown (about 2-3 minutes per side).
  7. Add chicken broth to the skillet; sprinkle with additional Parmesan.
  8. Transfer to the oven and bake for about 20 minutes or until cooked through.
