  • ½ cup buffalo sauce
  • ¼ cup ranch dressing (optional)
  • 1 medium spaghetti squash (about 22 ½ lbs.)
  • 2 ribs celery, thinly sliced
  • 2 green onions, thinly sliced
  • ½ cup diced red bell pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the spaghetti squash lengthwise and scoop out the seeds. Place cut side down on a baking sheet.
  3. Roast for 40-45 minutes until tender.
  4. In a mixing bowl, combine shredded chicken, celery, green onions, red bell pepper, buffalo sauce, and ranch dressing if desired.
  5. Once the squash has cooled slightly, shred the insides to create strands and fill each half with the chicken mixture. Top with blue cheese if using.
  6. Return to the oven for another 10-15 minutes until heated through.
