Ingredients
- 4 medium Russet potatoes
- 2 cups fresh broccoli florets (steamed)
- 1 cup sharp cheddar cheese (shredded)
- ½ cup sour cream
- 2 tbsp unsalted butter
- 3 green onions (chopped)
Instructions
- Preheat your oven to 400°F (200°C). Scrub and poke holes in the russet potatoes, then bake them directly on the oven rack for 45-60 minutes until tender.
- Steam the broccoli for about 5 minutes until bright green and tender, then chop finely.
- Once baked, cool the potatoes slightly, cut in half lengthwise, and scoop out most of the flesh into a mixing bowl.
- Mix the potato flesh with butter, sour cream, half of the cheddar cheese, and chopped broccoli until creamy. Season with salt and pepper.
- Spoon the mixture back into each potato skin and top with remaining cheddar cheese and green onions.
- Bake again for 15-20 minutes until heated through and golden brown.
