  • ½ cup sharp cheddar cheese, cubed or shredded (optional)
  • â…“ cup mayonnaise or plain Greek yogurt
  • 1½ tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and black pepper to taste

Instructions

  1. Rinse and chop broccoli into small pieces. Optionally peel stems for extra crunch.
  2. Core and dice the apple; toss with lemon juice if preparing ahead.
  3. Toast nuts in a dry skillet over low heat for 3–4 minutes. Let cool.
  4. Slice red onion thinly. Cube or shred cheese if using.
  5. In a small bowl, whisk together mayonnaise (or yogurt), vinegar, honey, salt, and pepper until smooth.
  6. In a large bowl, combine broccoli, apple, cranberries, nuts, onion, and cheese. Pour dressing over top and toss gently.
