  • 12 Hawaiian sweet rolls
  • 1 pound thick-cut bacon
  • 12 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup milk
  • 2 tablespoons melted butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange the bacon in a single layer. Bake for 15-20 minutes until crispy. Drain excess grease on paper towels.
  2. In a large bowl, whisk together eggs and milk; season with salt and pepper. Melt a tablespoon of butter in a non-stick skillet over medium heat, add the egg mixture, and cook until set but slightly moist. Stir in cheeses.
  3. Preheat oven to 350°F (175°C). Slice Hawaiian rolls horizontally and place the bottom half in a baking dish. Spread scrambled egg mixture evenly over it, then top with crumbled bacon and place the top half of the rolls back on.
  4. Whisk together melted butter, Dijon mustard, and garlic powder; brush over the tops of the rolls. Cover with foil and bake for 15 minutes; remove foil and bake an additional 5-10 minutes until golden brown.
  5. Let cool slightly before slicing into individual portions.
