  • 250 g digestive or graham crackers
  • 75 g butter
  • 300 g fresh blueberries
  • 800 g full-fat cream cheese
  • 260 g granulated sugar
  • 200 g sour cream
  • 4 large eggs
  • 110 g all-purpose flour

Instructions

  1. Preheat oven to 180°C (350°F). Crush the digestive or graham crackers and mix with melted butter. Press into the bottom of a springform pan and bake for 10 minutes.
  2. Toss blueberries with sugar, flour, and lemon juice; set aside.
  3. Beat cream cheese until smooth; gradually add sugars, then mix in sour cream, flour, cornstarch, vanilla extract, and eggs one at a time.
  4. Pour half of the cheesecake mixture over the cooled crust. Layer with half of the blueberries, followed by the remaining cheesecake mixture. Top with remaining blueberries.
  5. Bake for about 85 minutes until slightly jiggly in the center. Cool gradually in the oven before refrigerating for at least 4 hours.
