  • 2 medium fresh beets (about 250g)
  • 1 English cucumber (about 200g), sliced
  • 100g crumbled feta cheese
  • 2 tbsp fresh dill, chopped
  • 3 tbsp extra virgin olive oil
  • 1 tbsp aged balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wrap beets in aluminum foil and place on a baking sheet. Roast for about 45 minutes until tender. Let cool before peeling.
  2. Slice cucumber into thin rounds and set aside.
  3. In a large mixing bowl, combine cooled sliced beets and cucumbers.
  4. Crumble feta cheese over the mixture and sprinkle with chopped dill.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
