  • 2 tsp kosher salt
  • 2 1/2 tsp active dry yeast
  • 4 1/2 cups all-purpose flour
  • 1/4 cup unsalted butter (melted)
  • 2/3 cup baking soda
  • Sea salt or pretzel salt for topping

Instructions

  1. In a mixing bowl, combine warm water, brown sugar, and kosher salt. Sprinkle yeast on top and let it sit for about 10 minutes until bubbly.
  2. Add flour and melted butter to the yeast mixture. Mix with a dough hook for about 4 minutes until smooth.

  4. Preheat oven to 450°F. Boil water with baking soda in a large pot.
  5. Divide dough into 8 portions, shape into pretzels, and boil each for 30 seconds before placing on parchment-lined baking sheets.
  6. Brush with egg yolk mixed with water, sprinkle with salt, and bake for 12–14 minutes until golden brown.
