  • 1.5 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 200 g feta cheese
  • 1 cup cherry tomatoes, halved
  • 1/4 cup kalamata olives (optional)
  • Dried oregano
  • Garlic powder
  • Salt
  • Black pepper
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss halved potatoes with olive oil, oregano, garlic powder, salt, and black pepper until well-coated.
  3. Spread the seasoned potatoes on the baking sheet and place the feta cheese in the center. Scatter the cherry tomatoes and olives around it.
  4. Bake for 25–30 minutes until the potatoes are tender and golden.
  5. Remove from the oven; mash the feta slightly and mix it with the potatoes and tomatoes.
  6. Garnish with fresh basil or parsley before serving warm.
