Ingredients
- 1.5 lbs baby potatoes, halved
- 3 tbsp olive oil
- 200 g feta cheese
- 1 cup cherry tomatoes, halved
- 1/4 cup kalamata olives (optional)
- Dried oregano
- Garlic powder
- Salt
- Black pepper
- Fresh basil or parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss halved potatoes with olive oil, oregano, garlic powder, salt, and black pepper until well-coated.
- Spread the seasoned potatoes on the baking sheet and place the feta cheese in the center. Scatter the cherry tomatoes and olives around it.
- Bake for 25–30 minutes until the potatoes are tender and golden.
- Remove from the oven; mash the feta slightly and mix it with the potatoes and tomatoes.
