Ingredients
- 8 oz pasta
- 4 cups broccoli florets
- 1/2 cup extra virgin olive oil
- 1/4 tsp salt
- 1/2 tsp black pepper
- 8 oz brick of feta cheese
- 1 tbsp lemon juice
- 2 tbsp lemon zest
- 2 tbsp fresh basil
Instructions
- Preheat your oven to 400°F. Cut broccoli into quarters.
- In a baking dish, combine broccoli with olive oil, salt, and pepper. Make space in the center for the feta and drizzle more olive oil on top.
- Bake for 35 minutes. Meanwhile, cook pasta in salted water according to package instructions and reserve 1/2 cup of pasta water before draining.
- Once baked, mix roasted broccoli and feta until combined. Gradually add reserved pasta water until you achieve desired creaminess.
- Toss cooked pasta with the mixture and finish with lemon juice, zest, and basil before serving.
