  • 8 oz pasta
  • 4 cups broccoli florets
  • 1/2 cup extra virgin olive oil
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 8 oz brick of feta cheese
  • 1 tbsp lemon juice
  • 2 tbsp lemon zest
  • 2 tbsp fresh basil

Instructions

  1. Preheat your oven to 400°F. Cut broccoli into quarters.
  2. In a baking dish, combine broccoli with olive oil, salt, and pepper. Make space in the center for the feta and drizzle more olive oil on top.
  3. Bake for 35 minutes. Meanwhile, cook pasta in salted water according to package instructions and reserve 1/2 cup of pasta water before draining.
  4. Once baked, mix roasted broccoli and feta until combined. Gradually add reserved pasta water until you achieve desired creaminess.
  5. Toss cooked pasta with the mixture and finish with lemon juice, zest, and basil before serving.
