  • 8 oz dried ramen noodles
  • 1 cup carrot, cut into thin matchsticks
  • 4 tsp kosher salt
  • Freshly ground black or white pepper, to taste
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tbsp toasted sesame oil
  • Crispy chili oil, to taste

Instructions

  1. Gather and prepare all ingredients: chop garlic, ginger, scallions, and carrots.
  2. In a large pot over medium heat, combine chicken thighs with water; season with salt and pepper. Bring to a gentle boil.
  3. Reduce heat to simmer; add garlic, ginger, and white parts of scallions. Cook for about 15 minutes until chicken is done.
  4. Remove chicken from pot and shred it into bite-sized pieces before returning it to the soup.
  5. Add ramen noodles and carrots; cook according to package instructions until tender.
