  • 1 granny smith apple, cored and diced
  • 1 cup dried cranberries
  • 1 cup quinoa (uncooked)
  • 2 cups apple cider
  • 1/2 cup chopped pecans, roasted
  • Olive oil
  • Maple syrup
  • Minced red onion
  • Minced shallot
  • Dijon mustard
  • Salt
  • Pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil on a baking sheet. Roast for about 15 minutes until lightly browned.
  3. Rinse quinoa under cold water. Cook in a saucepan with apple cider until tender (about 15 minutes), adding cranberries during the last few minutes.
  4. In a large bowl, combine cooked quinoa, roasted sweet potatoes, diced apples, and red onion.
  5. Blend vinaigrette ingredients in a food processor until smooth; pour over salad and toss gently.
  6. Top with roasted pecans before serving.
