Ingredients
- 2 cups digestive cookies or graham crackers
- 6 tablespoons melted butter
- 3 cups fresh apple cider
- 3 bricks full-fat cream cheese
- 1 cup brown sugar
- 1 cup sour cream
- 3 large eggs
- Mulling spices (cinnamon, cloves, nutmeg)
Instructions
- Reduce apple cider with mulling spices in a pot until thickened (about 1 hour).
- Preheat oven to 350°F.
- Blend cookies into crumbs; mix with melted butter, salt, and powdered sugar.
- Press mixture into an 8” springform pan and bake for 10 minutes.
- Lower oven temperature to 325°F.
- Beat cream cheese with brown sugar until smooth; add sour cream, vanilla, salt, cinnamon, and reduced cider.
- Add eggs one at a time; mix until just combined.
- Pour filling into crust; bake in a water bath for about 90 minutes.
- Cool gradually in the oven for 30 minutes before refrigerating for at least 8 hours.
