Ingredients
- 2 large spaghetti squash
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 1 jar (16 oz) Alfredo sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 400°F (204°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle olive oil inside each half and rub to coat. Place cut-side down on a baking sheet, pricking the outside with a fork.
- Spread broccoli florets on the same baking sheet, drizzle with remaining olive oil, and toss to coat. Roast everything for about 30 minutes until the squash is fork-tender.
- Once cooled, scrape the strands from the squash into a large bowl. Add roasted broccoli, Alfredo sauce, and half of the mozzarella cheese. Mix gently until combined.
- Pour into a casserole dish and top with remaining mozzarella cheese. Broil for a few minutes until melted and golden brown.
