  • 1 block extra-firm tofu (14 oz)
  • 2 tablespoons white miso paste
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup
  • 1 teaspoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tablespoons cornstarch
  • 1 tablespoon neutral oil (avocado or canola)
  • 1 tablespoon toasted sesame seeds
  • 2 scallions, thinly sliced

Instructions

  1. Press the tofu for at least 30 minutes to remove excess water.
  2. In a mixing bowl, whisk together the white miso paste, soy sauce or tamari, rice vinegar, sesame oil, maple syrup, ginger, and garlic.
  3. Break the pressed tofu into 1-inch chunks and toss them in the marinade until well coated.
  4. Sprinkle cornstarch over the marinated tofu and drizzle with neutral oil; toss again to coat evenly.
  5. Place the tofu in a single layer in the air fryer basket and cook at 450°F for approximately 10 minutes, shaking halfway through until golden brown and crispy.
  6. Serve hot topped with toasted sesame seeds and sliced scallions.
